Piadina bread

3 1/2 cups all-purpose flour
1/2 teaspoon baking soda
Kosher salt
4 ounces lard (1/2 cup), at room temperature
3/4 cup water
1 tablespoon extra-virgin olive oil, plus more for brushing.

Combine the flour, baking soda and 2 teaspoons of salt.
Add the lard and cut into flour till evenly combined (like for pie dough).
Slowly add the water, mix until all the water has been added.
Mix dough with tips of finger until the dough sticks and forms a mass.
Form into a ball and knead until smooth.
Divide the dough into 6 pieces and roll each piece into a ball.
Wrap the balls in plastic and let rest at room temperature for 30 minutes.
